This Honduras coffee comes from a group of female-owned microlots called 18 Rabbits Farms, owned by the family matriarch, Dulce Marlen. Dulce Marlen and her husband are pioneers of both organic and biodynamic farming techniques, intentionally regenerating the soil they use for their agricultural practices. Members of the 18 Rabbit family have placed in the top 10 for the Honduras Cup of Excellence, and work together to create unique fermentations and cupping experiences for their partners. This particular lot has also earned the Organic stamp. Therefore, it is an indigenous, female-owned, organic microlot.

Brewing Guide

In the highlands of Marcala, Honduras  beneath the shadow of ancient Mayan pyramids  lies 18 Rabbit Estate, named after Uaxaclajuun Ub'aah K'awiil, the Mayan king of art and culture. Since the 1980s, this estate has been a pioneer in specialty coffee. Led by Señora Flhor Zelaya Ontreras, alongside her mother and daughter, the estate is one of the first in Latin America to achieve Organic and Biodynamic (Demeter) certification — a farming system that returns more nutrients to the soil than it takes, even respecting cosmic cycles.

The Zelaya Ontreras family are not just farmers, they are innovators. They create their own probiotics from garden ingredients to nourish the land. Decades of dedication have earned them consistent placement in Honduras' Cup of Excellence.

To achieve an exceptional flavor experience, process is only the beginning. Ten years ago, the Zelaya family partnered with fermentation experts to develop their signature Anaerobic Natural method. Ripe cherries ferment without oxygen in sealed tanks, slowing down the process and intensifying fruit characteristics and natural sweetness. This is the harmony between farm innovation and our curation..

At Heal Coffee Roasters, this journey of excellence is perfected in our quality control room. Our SCA Certified Head Roaster, with over a decade of experience in the coffee industry, develops every batch under an Omni Roast Profile  a balanced roast curve that performs beautifully across both espresso and manual brewing. Through multiple quality control cuppings before a single bag is sealed, we ensure that every release delivers a unique, exceptional experience. This is the harmonious result of a partnership: the land, the processor, and our roasting artistry — united for you.

Coffee Beans Brewing Guide

How to Brew the Perfect Cup of Coffee Beans

For a truly exceptional cup, use high-quality beans and the right brewing method. Follow these steps for the best results:

1. Measure Your Coffee

For espresso, use 18-20g of coffee. For manual brewing (like pour-over), use 15g of coffee.

2. Choose Your Brew Method

If making espresso, use an espresso machine. For manual brewing, use a pour-over setup or any similar method.

3. Heat Your Water

For espresso, heat your water to the right pressure, and for manual brewing, bring water to 88°-92°C (190°-198°F).

4. Brew Your Coffee

For espresso, aim for a 36-38g yield with a 28-30 second extraction time. For manual brewing, use a 1:15 coffee-to-water ratio. Pour water gradually, allowing the coffee to bloom, then finish brewing.

5. Enjoy Your Coffee

Once brewed, take a moment to savor the aromas and flavors. Espresso will have a bright, syrupy finish with vibrant raspberry and strawberry notes. Manual brew will have floral notes with a tea-like body, red berries, and a honeyed sweetness.
