  • Altitude: 1,900–2,280m fosters slow sugar development, intensifying fruit notes

  • Climate: 20–25°C temperatures + 1,800–2,000mm rainfall create lush, biodiverse ecosystems 

Artisan Processing by Bernabas Berhanu:

  • Cherries sun-dried 18–21 days on African raised beds, meticulously raked by day.

  • Midday sun protection (12–3 PM) + nighttime covering preserves delicate fruit esters 

  • Traceability: Sourced from smallholders in Gedeb’s Halo Hartume kebele, a Yirgacheffe subregion famed for floral/fruit-driven coffees

Omni-Roast Advantage 
Optimized for both espresso and filter, highlighting fruit brightness or depth.

ESPRESSO (18–20g dose):

  • Yield: 36–40g

  • Temp: 93°C

  • Result: Raspberry jam upfront, passion fruit spark, lingering strawberry sweetness.

  • With Milk: Evolves into berry compote swirled in vanilla custard.

  • Ratio: 1:15 (15g : 225g)
